Seventeen years ago we had an idea to open a bona fide Italian pizzeria, as authentic as any Italian restaurant you’d find in Rome, Milan or Pisa.  Back then the idea was so counter revolutionary someone cheekily suggested the name Col’Cacchio.  It means “up yours” and it became the cornerstone of our business.

We decided our Italian restaurant wouldn’t serve Italian style food.  It would be genuine Italian fare or not at all.  That meant sourcing and only using real Italian ingredients, preferably organic and free of additives or preservatives. 
It also meant learning Italian cooking, from an actual Italian who taught us to love slow cooked, unhurried food.  Italian meals are prepared with care, attention to flavours and most of all, with passion.

Even after all these years no one else does what we do.  No one else has over 50 pizzas on their menu and no one names them like we do.  If there’s another Italian restaurant that serves 20 different salad combinations, we haven’t found it.

By the time you’ve worked through the pizza menu and started on the pastas you’re probably on your second glass of wine, which is fine with us.  Preparing everything from scratch may take a little longer so we certainly don’t expect you to be in a rush.  Take your time to decide between pizza or pasta, chicken or lamb or whether you are in the mood for gorgonzola, emmenthaler or no cheese at all.  And if you can’t decide we’re happy to create something just for you. 
Why do we do all this?  It’s the Italian way and it’s our way.
