I still remember the first time I ever visited a Col'Cacchio. I was with my best friend Melissa and her family, and I was about eight months into my vegan journey. Being vegan, something not so common in my community at the time, meant that finding a place where we could all eat and enjoy ourselves was a bit of a challenge. Walking into the restaurant, I was immediately struck by the incredible aesthetic. We were greeted with the warmest smiles and promptly seated, setting the stage for a wonderful dining experience.

When it came time to order, we asked for recommendations for their best pizzas and most delicious pastas. As soon as the food arrived, I knew we were in for a treat. I can tell you, they did not disappoint. Normally, I'm not the biggest fan of olive oil, but I was pleasantly surprised by how much I enjoyed it with their dishes. The vibrant, fresh ingredients paired with Willow Creek's balsamic vinegar did wonders for my soul. I had a beautiful, hearty salad that was so delicious, I couldn’t help but drizzle it generously with balsamic vinegar—it brought everything together in the most delightful way.
